I’m Chef Arielle, and I’ve spent over twenty years working in professional kitchens, bakeries, and pastry environments across the globe. During that time, I saw something over and over again — incredibly talented bakers being told that plant-based pastry was too limited, too unstable, or too niche to be taken seriously.

And I knew that simply wasn’t true.

What was missing was education that explained why vegan pastry works, not just recipes that sometimes succeed and sometimes don’t.
